Midnight Sandwich

  • Main Ingredient: Underwood® White Meat Chicken Spread


  • 2 Tbsp. mayonnaise
  • 1/2 tsp. ground cumin
  • 2 Cuban sandwich rolls (halved)
  • 2 tsp. spicy brown or honey mustard
  • 1 4.25 oz. can Underwood® Chicken Spread
  • 4 slices deli baked ham
  • 4 slices swiss cheese
  • 4 B&G® Kosher Dill Pickle Sandwich Toppers


Heat large skillet or griddle over medium heat. In cup, mix mayonnaise and cumin. Spread tops of rolls with mayonnaise mixture and bottoms with mustard. Smooth Chicken Spread over mustard. Layer ham, cheese and pickle slice over chicken. Cover with top half of rolls. Wrap each sandwich tightly in foil. Place sandwiches in heated skillet. Place heavy skillet or pot on both sandwiches to flatten and cook 5 minutes. Turn sandwiches; flatten with skillet and heat 5 minutes longer. Unwrap sandwiches; cut each crosswise in half. Serve immediately.
