Pesto Chicken Ciabatta Sandwich

Pesto, roasted peppers and fresh mozzarella are the perfect complement to chicken especially when served on crusty ciabatta rolls.

  • 1 4.25 oz. can Underwood┬« White Meat Chicken Spread
  • 1 1/2 Tbsp. prepared pesto
  • 2 ciabatta rolls
  • 4 oz. fresh mozzarella (sliced)
  • 1 cup arugula or baby spinach


In small bowl, combine Chicken Spread and pesto. Spread mixture evenly on bottoms of ciabatta rolls. Top evenly with roasted pepper, mozzarella and arugula. Spread addition pesto on inside of roll if desired.
